St. Lawrence was a deacon in the early Church and is remembered for his martyrdom during the persecution of Christians under the Roman Emperor Valerian in the 3rd century. As one of the seven deacons of Rome, St. Lawrence was entrusted with the care of the Church's treasures and the responsibility of distributing alms to the poor. When ordered to hand over the riches of the Church, Lawrence instead distributed them to the poor and presented them as the true treasures of the Church. For this act of defiance, he was sentenced to a brutal death, being roasted alive on a gridiron. According to tradition, while enduring his torment, he famously said, "Turn me over; I’m done on this side." His unwavering faith and courage in the face of death made him a beloved martyr and patron saint of deacons, the poor, and cooks.
